Easy Chocolate No Bake Cookies

I still remember my childhood babysitter used to make no bake cookies with me in her dad’s kitchen. Those days were always nice, especially in the summer when our cookie cravings were met with ninety degree days. No one wanted to run the oven on those days, but something had to satisfy our craving for chocolate!

No bake cookies were definitely childhood favorite of mine. I enjoyed home-baked chocolate chip cookies, but those took maybe just a little too much time for an impatient nine year old!

That’s one of the reasons I still like no bake cookies to this day. They can be made in less than ten minutes and are super delicious! Made with just five ingredients, they couldn’t be easier to make.

The base for no bake cookies is oats. I used old-fashioned oats for this recipe, however instant oats work just fine as well. The oats are what forms the bulk of the cookie that the melted chocolate holds on to to. When softened in milk before adding the chocolate and peanut butter they end up being so chewy and soft when the cookies are done.

The two supporting ingredients are chocolate and peanut butter. I used vegan chocolate chips for this recipe, but baking chips work too. If you still want your cookies to be sweet when using baking chips I would recommend adding a tablespoon or two of coconut sugar to the milk while softening your oats.

The ratio of chocolate to peanut is flexible. It all comes down to the desired consistency of your cookies. The ratio I used for this recipe is 1/3 cup chocolate chips to 1/4 cup peanut butter because I wanted a very soft and smooth cookie. The more peanut butter you use the smoother and softer your cookies will be. However, I would advise against using too much peanut butter as this can keep your cookies from fully setting; leaving them sticky and unable to hold together.

The last ingredient I added was chopped peanuts. I like using peanuts, because it adds just a little crunch and texture. Feel free to swap it out for your favorite add-in. Dried fruit, different nuts, even chocolate candies would all be amazing add-ins!
